The Urban Farmer - Fillet of Salmon with Mango

Learning to cook these delicious and easy salmon dish and mango ** Ingredients: - 2 tablespoons olive oil - juice and rind of 1 lemon or lime - 1 tablespoon soy sauce - 1 clove garlic chopped - 1 / 2 inch grated fresh ginger - a splash of apple juice - 2 salmon fillets - 1 mango, cut into wedges or 1 can of mango slices Preheat oven to 450F. Mix all ingredients except salmon and mango. Place the salmon in a baking dish and pour the sauce over the top. Bake for 8-10 minutes per inch of thickness,Serve with slices of mango on top.
